| Chicken Salad Printemps
1 Whole Cooked Chicken Chopped - 5-6 Cups
3 Celery Stalks Finely Chopped
1 Large Apple Finely Chopped
1 Cup Grapes Quartered
1/2 Cup Currants
3/4 Cup Roasted and Unsalted Cashews
1 1/2 Cup Mayonaise
1 Tablespoon Turmeric
1/2 Teaspoon Salt

This is Karyn's favorite way to use left over chicken with a cut down recipe or in this case a whole fresh chicken. This salad is wonderful by itself or as a sandwich on a croissant or baguette.
- In a large bowl mix chicken, celery, apple, currants, grapes, cashews.
- In a small bowl mix the mayonaise, turmeric, and salt.
- Mix the mayonaise mixture into the large bowl and fully coat the other ingredients
- Cover the salad and let rest for at least one hour, overnight is best to fully mix the flavors.
